Autumn delicacies are inviting
In Istria, autumn represents the time of first-class gastronomic pleasures. There are Refosco, Malvasia, Muscat and other local grape varieties maturing in barrels, while the first fresh olive oil is coming out of oil mills (torklja). There are dishes of St. Martin and persimmon treats on the table.
Autumn is the proper time for the salting of anchovies and preparation of delicious and highly valuable dishes such as sadelle in saor (“šavor”). Learn how to prepare them.
